Ingredients for four people:

4 slices of stale homemade bread - 2 150g packets of Filetti di Salmone Rio Mare in Olio di Oliva - 4 hard and ripe tomatoes - 1 fresh spring onion – some basil leaves – 40ml of extra virgin olive oil – freshly ground black pepper - salt

Light and rich in anti-oxidants thanks to the carotene in the tomato, the vitamins of the extra-virgin olive oil and the Omega3 to be found in the salmon.

Prep:
1. Quickly run the bread slices under some water, break them into small pieces, dice the tomatoes and thinly slice the spring onion.

2. Place the ingredients in a bowl and add the pieces of drained and flaked Filetti di Salmone Rio Mare.

3. Season with the oil, a pinch salt and pepper and flavour with the freshly cut basil leaves.

4. Marinate for 20 minutes and eat fresh.

For a wholesome and well-balanced meal, pair with 120g of sauté steak and round off with a piece of fruit.
